Baked Butter Garlic Lobster
1 cup bread crumbs
1/2 cup butter, melted (reserve 1/4 to serve on the side)
2 tablespoons, chopped fresh parsley
4 cloves fresh garlic finely minced
Cayenne pepper to taste (Optional if you want a little kick)
salt and freshly ground black pepper to taste
2 live lobsters, split in 1/2 lengthwise
Extra-virgin olive oil
1 lemon cut in wedges
Preheat oven to 425 degrees F.
Mix breadcrumbs, butter, parsley, garlic and season with salt, freshly ground black pepper and Cayenne pepper.
Place the #lobster halves flesh side up in a roasting tray. Top with the breadcrumb mixture. Drizzle with extra-virgin olive oil. Bake in the hot oven for 30 minutes until the topping is golden brown. Serve with a shell cracker for the claws. Serve with fresh lemon wedges, and steamed veggies or salad with a small bowl of melted #butter for dipping. Pair with your favourite white #wine.
