The Ribeye cap is one of my favourite parts of the cow.  What is the ribeye cap? If you look at a ribeye steak, you’ll see the large eye of meat that’s the center of the cut. Surrounding this center is the cap of ribeye.  The cap is juicy, flavourful and so tender.  Always start here when eating rib steaks.
